In this recipe, I’m sharing a light Ayurvedic broccoli soup made with garlic, almonds, and gentle spices. It’s creamy without dairy, warming without heaviness, and perfect for supporting gut health, digestion, and overall balance.

Ingredients for Almond Broccoli Soup

  • 1 small broccoli, chopped

  • 3–4 cloves garlic, finely chopped

  • 1½ tsp ghee
    (or coconut oil or olive oil)

  • 1 tsp dried or fresh oregano

  • 4 whole black peppercorns

  • 1–1½ cups water

  • 1½–2 cups almond milk

  • Salt to taste

  • Black pepper powder, to taste

  • Optional: a pinch of nutmeg

How to Make Gut-Healing Almond Broccoli Soup

1. Cook the Broccoli

First, heat ghee in a pan on low flame.
Add garlic and sauté gently until aromatic — avoid browning.
Next, add oregano and whole black peppercorns.
Then, add chopped broccoli and sauté for 1–2 minutes.

2. Simmer

Add water and cook on low heat until the broccoli becomes very soft and mashable, about 10–15 minutes.

3. Blend

Allow the mixture to cool slightly.
Blend with 1 cup almond milk until smooth and creamy.

4. Finish

Return the soup to the pan and reheat gently.
Add salt, black pepper, nutmeg (if using), and remaining almond milk to adjust consistency.
Simmer briefly and serve warm.
