You’ll Need:
Fresh chopped lemongrass – 2 tablespoons
(Tip: It grows easily in pots and gardens, so consider planting some! If not, try to buy it fresh. If that’s unavailable, dried lemongrass will work too.)

Water – enough for 1 jar (you can scale up if needed)
How to Make It:
In a kettle or saucepan, bring one jar of water to a boil.
Add 2 tbsp lemongrass and 1 tbsp fennel seeds.
Let it simmer for about 10 minutes, allowing the herbs to infuse fully.
Turn off the heat and let it steep for 15–20 minutes.
Strain the liquid into a glass jar and let it cool completely.
Once cooled, store it in the refrigerator for a few hours (or overnight).
